My design assistant bowed out for this one - she was exhausted from a tough day at school (the letter of the week is Q - always a hard one).
So, Spatula Man stepped up to the plate. He was very excited to help me do some baking - until he realized his sister has left her entire bucket of beads on the counter for his singular enjoyment. He proceeded to carefully measure beads into his pot while I mixed up the ingredients for some (somewhat) wholesome banana bread.
How did I pick my recipe? I googled "banana bread" and this one popped up - it looked intriguing...
Wholesome Banana Bread - Original Recipe
Ingredients
· 2 cups whole wheat flour
· 1 teaspoon baking soda
· 1/4 teaspoon salt
· 1/2 cup sugar free applesauce
· 3/4 cup honey
· 2 eggs, beaten
· 3 mashed overripe bananas
Directions
1. Preheat
oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
2. In a large
bowl, combine flour, baking soda and salt. In a separate bowl, mix together
applesauce and honey. Stir in eggs and mashed bananas until well blended. Stir
banana mixture into flour mixture; stir just to moisten. Pour batter into
prepared loaf pan.
3. Bake in
preheated oven for 60 to 65 minutes, until a toothpick inserted into center of
the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out
onto a wire rack.
But, then I did a little kitchen inventory and had to make the following changes...I used a 1/4 cup oil and 1/4 cup applesauce, and I only had 1/4 cup of honey left, so I used a 1/2 cup of brown sugar. Also, I've never really loved whole wheat flour, and I didn't have any, so regular unbleached flour went on in. This is actually a good day for me - usually I'm missing a minimum of 3 ingredients completely!!!
I also prefer smaller loaves, so I split the batter evenly between loaf pans - it just gives a shorter loaf - but easier to eat, and it's nice to have one to share! I baked them for only 45 minutes, too - since they were smaller.
My husband's coworkers gave it a seal of approval - as did Spatula Man :) "Mer, Mommy" is all he said between bites (Mer = more in Spatula Land).

Spatula man..too funny. My mother recently made some banana bread. it's all finished now. She used a different recipe to that one however. =D
